Here is one of my favorite recipes I prepare with left over
Turkey that the family has enjoyed.We usually serve it on the Saturday after Thanksgiving
when we are putting up Christmas decorations.A little “Norman Rockwell” but it works!
(Oh yeah, and I am usually drinking a Brandy Sweet Old Fashioned)
RECIPE
- 1/4 cup of fresh Mushrooms
- 1/4 cup finely chopped Red Pepper
- 1/4 cup minced Yellow Onion
- 5 Tablespoons of Butter
- 3 Tablespoons of Flour
- 1 Cup of Turkey Stock (roasted drippings)
- 1/4 cup of Heavy Cream
- 2 cups of pulled Cooked Turkey
- 1 Egg Yolk (beaten)
- 1/4 cup of Peas
- 2 Tablespoons of Sherry
In a sauté pan melt 2 Tbsp. of butter. Sauté the mushrooms, peppers & onions. Set Aside.
Melt the remaining butter in a large sauce pan, Stir in flour, let cook.
Stir in stock until thickens.
Stir in cream, bringing sauce to a boil.
Take a 1/4 cup of sauce and beat in egg yolk. Combine with rest of sauce.
Add sautéed vegetables and turkey mixture to sauce.
Add peas and sherry. Lightly stir until peas are fully cooked.
Serve over buttered toast.
