Roasted Goose with Caramelized Apples

RECIPE
- 12 lb whole goose
- 3 garlic cloves, sliced
- 8 apples (your favorite baking apples)
- ¼ cup of lemon juice
- 6 Tbsp of sugar
- ¼ of calvados
- 1 tsp of ground cinnamon
Preheat oven at 350.
Rinse goose with water inside and out.
Pat dry and season with salt and pepper, inside and out.
With a small knife, cut slits all over the goose and slide sliced garlic in them.
Place goose on a rack in a roasting pan, breast down and bake for 2 hours, basting with its own fat every 20 minutes.
Remove excess fat and reserve 6 Tbsp of fat.
Turn goose over and finish baking until golden brown (approximately 45 minutes).
While the goose is cooking, place peeled and quartered apples in lemon juice, drain and toss in the reserved goose fat.
Add sugar, calvados and cinnamon. Place in goose roasting pan for the last 45 minutes to a hour of the baking process.
Place roasted goose in a carving platter with apples around it, cover with foil and let rest 10 minutes before carving.
